6-ounce can or jar good tuna packed in oil, drained
¼ cup mayonnaise
2 ounces (4 tablespoons) softened cream cheese
1 tablespoon fresh lemon juice
1 teaspoon liquid smoke, preferably Wright’s® Liquid Smoke, Applewood
½ teaspoon salt
½ teaspoon black pepper
¼ cup minced roasted red peppers
1 tablespoon minced shallot
1 tablespoon minced chives
Pinch cayenne pepper

Place the chunks of tuna in a large bowl and use a fork to flake the fish. Add the mayonnaise, cream cheese, lemon juice, liquid smoke, salt, and black pepper, then whip the mixture until it reaches a smooth consistency. Gently stir in the remaining ingredients until they are evenly distributed throughout the smoked tuna spread. Serve chilled with crostini, crackers, and/or crudité.
