Flavored Butters Spice up Clambakes


A clambake is the quintessential summertime feast and dipping everything in sweet butter makes it even better. Next time you steam lobsters, clams, potatoes, corn, et. al., try making some of these flavored butters to heighten the flavors of the shellfish.

Spicy Dill Butter
8 ounces salted butter (2 sticks)
5 to 6 dill stems
½ teaspoon hot red pepper flakes
Strips of peel from 1 lemon

Red Pepper and Basil Butter
8 ounces salted butter (2 sticks)
1 red bell pepper, cut into large dice
5 to 6 basil stems

Fennel Butter
8 ounces salted butter (2 sticks)
½ bulb fennel cut into large dice
½ teaspoon fennel seed

Chorizo Butter
8 ounces salted butter (2 sticks)
4 ounces chorizo, browned

Melt the butter in a small sauce pot over medium heat. Bring the butter to a boil for 15 to 20 seconds. Turn off the heat and use a spoon skim and discard the white foam from the top.

Add the remaining ingredients from the respective butter that you choose. Allow the ingredients to steep in the warm clarified butter for 10 to 12 minutes. Warm the butter over low heat if it starts to solidify then strain out the solid ingredients before serving.
