3 carrots, peeled and cut into ¼-inch-thick coins
3 stalks celery, cut into ¼-inch-thick slices
1 bulb fennel, cut into medium dice
1 onion cut into medium dice
1 small head green cabbage, quartered and chopped into bite-sized pieces
4 ounces green beans, trimmed and cut into bite-sized pieces
2 teaspoons salt
1 teaspoon black pepper
½ teaspoon ground fennel
1 (15 ounce) can diced tomatoes, with liquid
1 quart V8 Low Sodium juice
2 cups low sodium beef broth
2 cups water
In a very large pot, combine all ingredients and simmer over medium heat until vegetables are tender, about 1 hour. Taste and season with additional salt and pepper if desired.
